Chilled trays live or die on two details: how long the base holds cold, and whether the insert comes out for washing. Ours separate completely, so the ice reservoir goes in the freezer and the compartments go in the sink. Fill the base with ice rather than water if you want the tray cold in ten minutes rather than overnight, and rinse the insert before the fat sets. The rest of the shelf is on chilled serving trays.
